When Lauren is flaring, we avoid giving her red meat because it is known to increase inflammation in the body. Since she loves spaghetti, I will often make this turkey meatball recipe as an excellent substitution.
These turkey meatballs are easy to make and so full of flavor and tenderness, that they can stand on their own without sauce or noodles. When I am making these, the kids will usually magically appear in the kitchen and pop them in their mouths like popcorn, lol. The kids actually prefer these over the traditional beef meatballs!
Not Your Mama's Meatballs
Ingredients:
1 pound ground turkey
1 egg
1 Tbsp Italian seasoning
1 Tbsp garlic-infused olive oil
2 tsp rosemary
1 Tbsp parsley
1 tsp sea salt
Additional garlic-infused olive oil or olive oil for pan
Directions:
In a large mixing bowl, combine the ground turkey, egg, oil, and seasonings.
Using a medium-size cookie scoop, form 18-20 golf-ball sized meatballs.
Heat the garlic-infused olive oil on medium heat in a cooking pan. Pan fry the meatballs for about 3-5 minutes on each side. To guarantee the meatballs are fully cooked and to retain moisture, cover the pan with aluminum foil or a lid while cooking.
Serve as-is or top with spaghetti sauce, oil, and vegan cheese.
